Veggie soup (Vardagssoppa med grönsaker)

A great tradition in France (and historic!), always serve a soup before dinner in winter time. One of my mum's memories from France when she was young and staying in a french family, in the beginning of the week the soup was thick and creamy but as time passed by and water was added, at the end of the week ...

My way of making a soup is all depending of the ingredients, my vegetable grocer will lead the way! I usually make it from carrots, leeks, broccoli and potatoes. It depends. The potatoes makes the texture nicer, you can add some creme if you like. Just put the veggies in a big saucepan, add water and stock cube and some spices of your choice. Boil until soft, add creme and use your mixer. Can be served with croutons or sprinkled parsley on the top. Bon app'!
